The charcoal subdivider from the Danish company Dancook is a practical helping item for indirect grilling. With both subdividers you can fix charcoal at the border of the grill so that a free space emerges in its middle.
Dancooks charcoal subdivider consists of two pieces that are suspended in the grill iron where the charcoal is placed. The charcoal is kept at the borders of the grilling area because of the subdivider. An empty space will appear in the middle which is going to be heated indirectly. This free space can be used for indirect grilling, this means that you can simply place meat on the middle part and let it cook.
Indirect grilling is specially recommended for bigger pieces of meat. These should be cooked softly because if not, their exterior will get burned before they get enough cooked from the inside. Another advantage is the reduced smoke production comparing to direct grilling. With the direct grilling method, meat juice, marinades and fat drop into the glow causing a lot of smoke and sometimes also fire. Consequently this does not only lead to undesired burnt meat, but also disturbs guests and neighbors.
