Chopping boards – how to find the right one for your kitchen

  1. A board for every use: breakfast board, chopping board, serving board
  2. The material: wood, plastic, marble
  3. Extra features of chopping boards
  4. Good hygiene: how to clean chopping boards
  5. Summary – what to look for when buying chopping boards

1. Boards for every use: breakfast board, chopping board, serving board

Every dish starts with chopping the ingredients. Along with a sharp knife, the right chopping board (2) makes preparing food much easier.

A smaller breakfast board (1) is perfect for chopping fruit for your muesli in the morning and makes a lovely board for a light supper in the evening.

If you need to chop or carve, a thicker chopping board is an advantage. A carving board (4) stands out for its extra-thick material, which protects your kitchen surfaces.

A chopping board made of wood, marble or stone can also be used as a stylish serving board (3) for cheese, fruit or snacks.

2. The material: wood, plastic, marble

Thanks to their robust, natural qualities, wooden boards (1) are among the most popular chopping boards. Bear in mind, however, that wood absorbs the smell of strongly flavoured foods. For ingredients such as garlic or onions, we therefore recommend using a separate chopping board. Wooden boards are not dishwasher safe and should be washed by hand.

Marble boards and glass chopping boards (2) are particularly well suited to fruit and vegetables. Their smooth surface makes them resistant to food acids, and they don't absorb smells or flavours. Glass boards can simply go in the dishwasher. Marble chopping boards should be washed by hand.

Plastic boards (3) stand out for being light and flexible. They are easy to care for and dishwasher safe, so they're ideal for preparing strong-smelling ingredients too. The softer material of plastic boards also means your knife blades won't blunt as quickly.

Chopping boards made of different materials (4) are not only eye-catching when you serve, but can also be turned over so you can prepare different ingredients separately – meat on one side and vegetables on the other, for example.

3. Extra features of chopping boards

Chopping boards with extra features make preparing food that much easier. Folding plastic chopping boards (1), for example, make sure your ingredients always end up in the pan or pot.

Chopping boards with juice grooves or collecting trays (2) are particularly practical when meat or vegetable juices collect while you're cutting. That way, both the cutting surface and your worktop stay clean.

Chopping boards with an integrated bowl or tray (3) are particularly good for serving. You can place vegetable sticks on the board, for example, and dip them into the bowl.

Colour-coded board sets (4) are an advantage if you work with lots of different foods in the kitchen. You can use one chopping board for vegetables, one for fish, one for meat and one for strong-smelling foods, for example. Using separate boards is also more hygienic and limits the spread of germs.

4. Good hygiene: how to clean chopping boards

While glass and plastic chopping boards can go in the dishwasher, it's best to wash marble boards by hand. Never submerge wooden boards in water, as this can cause the wood to rot. As many types of wood (including bamboo, beech and acacia) have antibacterial properties, washing by hand with a kitchen sponge is enough.

Thorough hygiene is particularly important if you prepare meat, fish or poultry on the chopping board. A water temperature of 60 °C is enough to kill most bacteria.

Wooden boards should also be treated regularly with linseed oil, olive oil, coconut oil or beeswax. Oiling closes knife cuts and stops germs getting inside your wooden board.

5. Summary

  • Chopping boards are versatile: for preparing ingredients, as a breakfast board for a light meal, for carving poultry or for serving snacks.
  • There's a wide choice of materials: wooden boards are the kitchen classic and particularly robust. Plastic boards, on the other hand, are extremely easy to care for, and chopping boards made of marble or stone impress with their high-quality look – ideal for serving.
  • Various features can make cooking easier: folding boards let you work precisely, juice grooves catch liquids, and colour-coded boards for different foods keep your kitchen hygienic.
  • How you clean a chopping board depends entirely on its material. Glass and plastic can go in the dishwasher, while wood and marble are best washed by hand. Wooden boards also benefit from regular oiling.
